New Zealand’s next Gordon Ramsay?

Peter Dann, a third year apprentice chef at Copthorne Hotel Palmerston North, won this year’s ServiceIQ Apprentice Chef of the Year 2015.  ServiceIQ, an industry training organisation proudly sponsored this event to support New Zealand’s emerging cookery talent.  The competition was held at Logan Campbell Centre in Auckland on August 1st 2015.




Supporting Peter on the day was Jono Mawley, Executive chef Copthorne Palmerston North, Emma Kirkland, NZ Marketing Manager Millennium, Copthorne & Kingsgate Hotels and Kim-Marie Rixson, Director Human Resources Millennium, Copthorne & Kingsgate Hotels.  Watching with interest through regular postings of process on Facebook was Cary Lister, General Manager Copthorne Palmerston North.

His winning dish? A sumptuous Roasted New Zealand Saveur Duck Breast, served with black rice, parsnip, medjool date, snap peas, watercress salad, beetroot chutney, finished with a Cointreau & Nicolas Feuilatte Champagne Sabayon. Yummy!




A dish worthy of a masterchef
Peter works as a Chef de Partie under Executive Chef, Jono Mawley at Copthorne Hotel Palmerston North. Peter says this was a great way to challenge himself at a whole new level. When asked why he has a great love and passion for cooking, Peter said “It is such a complex form of art that involves all of our senses, and for me, it is the most challenging thing I have ever done. From conceptually coming up with a smart and intuitive dish, to writing recipes, and honing cooking method, there is no peak to the skill level required in this industry, as it is forever evolving. There are always new things to learn and techniques to master.”

Peter wants to explore and learn more about the food of different cultures, and luckily for him, his adventure is about to begin as has won a trip to Australia and will travel to next year's Melbourne Food and Wine Festival. Peter has been fortunate to have the guidance and mentoring of Jono Mawley and his prize includes the opportunity to be mentored by two executive chefs in New Zealand.
